To achieve silky microfoam instead of dry, soapy bubbles, technique matters. Here is how to nail it at your desk:
1. Heat the Milk: Warm your milk to roughly 140°F–150°F (60°C–65°C). Avoid overheating, as scolding ruins the natural sweetness. 2. Aerate at the Surface (5–8 Pulses): Pour the warm milk into your press. Pull the plunger just up to the surface of the milk and pump vigorously 5 to 8 times to introduce air. 3. Emulsify (15–20 Seconds): Submerge the mesh filter completely beneath the surface. Pump rapidly with short, controlled strokes. This forces air through the liquid, breaking down large bubbles into glossy microfoam.
If you are pairing this technique with a compact setup like

Remove the plunger and tap the bottom of the glass gently on your desk to pop any remaining stray bubbles. Give the milk a gentle swirl until it resembles glossy, wet paint. Pour it steadily into your freshly pulled espresso shot.
You do not need a bulky commercial machine to enjoy luxurious lattes. With a solid manual brewer and this French Press technique, incredible coffee is always within reach.
